→ Dairy

02 - 4 cups whole milk
03 - 1/4 cup heavy cream
04 - 3 tablespoons unsalted butter

→ Sweeteners

05 - 1/2 cup granulated sugar

07 - 1 teaspoon ground cinnamon
08 - 1 teaspoon pure vanilla extract
09 - 1/4 teaspoon fine salt

# How to Prepare:

01 - Preheat oven to 325°F. Lightly butter a 2-quart baking dish.
02 - Rinse rice under cold water until water runs clear, then drain thoroughly.
03 - In a large saucepan, combine whole milk, heavy cream, granulated sugar, butter, cinnamon, and salt. Heat over medium heat, stirring constantly until sugar dissolves and mixture is hot but not boiling.
04 - Stir in rinsed rice and raisins into the milk mixture. Remove from heat and stir in vanilla extract.
05 - Pour mixture into prepared baking dish and stir gently to distribute rice and raisins evenly.
06 - Cover baking dish tightly with aluminum foil. Bake for 55 minutes, stirring gently halfway through the baking time.
07 - Remove foil and bake an additional 15 to 20 minutes until pudding is thick and rice is tender.
08 - Allow to cool for 10 minutes. Serve warm or chilled, garnished with ground nutmeg if desired.

# Expert Suggestions:

01 -
  • It tastes like comfort without any pretense, the kind of dessert that makes people feel genuinely cared for.
  • The oven does most of the work while you're free to do something else entirely.
  • It's naturally gluten-free and stretches to feed a crowd without any fussing.
02 -
  • Halfway stirring is not optional—without it, you end up with creamy pudding on top and a layer of drier rice on the bottom.
  • If your pudding seems too thick after cooling, a splash of milk stirred in will bring it back to silky without ruining the texture.
03 -
  • If you want extra richness without heaviness, replace half the milk with coconut milk—it adds depth without making the pudding feel overly thick.
  • For a less sweet version, cut the sugar to 75 grams and let the cinnamon and vanilla do more of the talking.
