# How to Prepare:

01 - Heat a large pot over medium heat. Add a splash of olive oil, then sauté onion, garlic, and celery for 4 to 5 minutes until softened.
02 - Add the carrots and cook for another 3 minutes, stirring occasionally.
03 - Stir in cumin, coriander, turmeric, and chili flakes. Cook for 1 minute until fragrant.

07 - Ladle into bowls and garnish with fresh herbs and a swirl of yogurt or coconut cream if desired.

# Expert Suggestions:

01 -
  • It feels like a warm hug on a cold day thanks to the earthy spices.
  • The red lentils melt into the broth making it thick without needing heavy cream.
02 -
  • Rinsing the lentils well prevents the soup from having a dusty or chalky taste.
  • If the soup gets too thick after sitting just splash in a bit more hot water.
03 -
  • Sweat the vegetables slowly to draw out every bit of natural sugar before adding liquid.
  • A pinch of smoked paprika can add a subtle woodsy depth if you want a campfire vibe.
