Grilled peaches and Brie on flatbread with BBQ sauce bring sweet, smoky summer vibes to any table.

# What You'll Need:

→ Flatbread Base

01 - 2 large store-bought or homemade flatbreads (such as naan or pizza crust)

→ Toppings

02 - 2 medium ripe peaches, pitted and sliced
03 - 6 oz Brie cheese, sliced
04 - 1/2 small red onion, thinly sliced
05 - 1/3 cup BBQ sauce
06 - 1 tablespoon olive oil
07 - 1/4 cup fresh basil leaves, torn
08 - 1/4 cup arugula (optional)
09 - Freshly ground black pepper, to taste

→ Garnish

10 - 2 tablespoons honey
11 - 1 tablespoon toasted pine nuts

# How to Prepare:

01 - Preheat grill to medium-high heat, approximately 400°F.
02 - Brush peach slices lightly with olive oil. Grill the slices for 1 to 2 minutes per side, until grill marks form and peaches are just softened. Remove and set aside.
03 - Lightly brush both sides of each flatbread with olive oil.
04 - Place flatbreads directly on the grill and heat for 1 to 2 minutes per side to lightly crisp. Remove from grill.
05 - Spread BBQ sauce evenly over the surface of each flatbread.
06 - Arrange grilled peach slices, sliced Brie, and red onion evenly on the flatbreads.
07 - Return flatbreads to the grill, close the lid, and cook for 3 to 4 minutes until the cheese melts and the edges are crisp.
08 - Remove flatbreads from the grill. Let cool for 1 minute. Top with torn basil, arugula, honey drizzle, and pine nuts as desired. Season with black pepper.
09 - Slice and serve immediately.

# Expert Suggestions:

01 -
  • The smoky grilled peaches make every bite taste like sunshine on your plate.
  • If you love a balance of creamy and tangy, the Brie versus BBQ is a knockout.
02 -
  • If the grill is too hot, the flatbread can turn to charcoal in seconds—keep it moderate for crispy, not burnt, results.
  • Brushing fruit and flatbread lightly with oil made cleanup (and flipping) so much easier, and prevented ingredients sticking on disaster-prone grates.
03 -
  • Letting the grilled peaches rest for a minute before adding to the flatbread keeps juices from running everywhere.
  • Grilling with the lid closed melts Brie faster and infuses more smoky flavor into the whole dish.
